Chili Mole

Seasoning

1/4 tspn cayenne pepper
1/4 tspn white pepper
1/4 tspn allspice
1/4 tspn nutmeg
1 tspn thyme
1 1/2 tspn marjoram
1 1/2 tspn cinnamon
3 tspns cocoa (unsweetened)
2 tblspns chili powder


Chili Mole

2 tblspns veg. oil
2 lbs turkey or veg. protein
1 large onion
1 large red pepper, chopped
1 28 oz can tomatoes
1 15 oz can black beans, rinsed
2 tspns chili mole seasoning
1/2 tspn salt
1/2 tspn fresh ground pepper

Heat oil in skillet. Saute protein, onion and red pepper until protein is cooked. Add tomato sauce and seasoning. (Beans can be cooked separately or added.) Simmer 15 minutes. Taste and adjust seasoning. Yum! Especially good served on corn tortillas with guacamole.

Minted Sweet Pea & Spinach Soup

Use frozen chopped spinach & frozen sweet peas, but must use fresh mint
Add heavy cream for a rich, fancy soup

Melt 4 tbs sweet butter in pot, add 2 cusps chopped yellow onion. Cover & cook until tender/ slightly brown

Pour in 3 cups of stock (chicken, veggie), add 1 bag chopped spinach & 1 bag frozen peas (note recipe calls for 10 oz, which tends to be less than one bag, but using a whole bag is easier). Bring to a boil, reduce heat and simmer partially covered ~ 20 min.

Pick mint leaves from ~ 1/2 bunch or 1 bunch of mint. Add minto to pot, and let simmer another 5 min. (you can sprinkle a bit of fresh mint on at the end also)

Puree soup. add salt/ pepper to taste. (optional, add some heavy cream to taste-- recipe recommends 1 cup, but probably don't need that much)

Sweet Potato Fries

Peel a big sweet potato (optional) (Garnet sweet potatos are the sweetest)
Chop into 1/4-1/2" sticks
Soak in hot water for around ten minutes
Dry off
Toss in oil about 3 tbls (one with a high smoke point - like Grapeseed, Canola, Corn)
Spread out on a baking sheet and cover with tin foil
Cook at 480 for 10 minutes then uncover
Continue to cook for 4-8 minutes, flip
Cook until crisp (check every 4 min)
Serve on a paper towel
